I am usually one to stay away from chicken salad, tuna salad, or any type of salad that usually goes in a sandwich or wrap. Just because of the amount of mayonnaise they usually have. Don’t get me wrong…I love mayonnaise, But I am trying to be healthy and good when it comes to eating for the new year.
I was trying to think of different ways I could make a healthier version of chicken salad. Of course, you could always use low fat, fat free mayonnaise or a mayonnaise that contains a different fat like olive oil, or canola oil…
But sour cream came to my mind. I do love my sour cream. Low fat sour cream that is. It tastes just as good as full fat sour cream, in my opinion. Then I thought of adding some sweetness to the mix. Sweet pickles. YUM!
Chicken tenders, garlic powder, onion powder, salt, pepper, sweet pickles. sour cream, turkey bacon, and iceberg lettuce (or romaine). Thats all of the ingredients you need for this recipe, and chances are you already have half of them.
You want to make sure you season your chicken tenders with some salt and pepper before baking them. It brings out a nice flavor.
In a large bowl, you want to mix together your sour cream, chopped up pickles, garlic powder and onion powder.
Add your cooked and crumbled turkey bacon. Mix around until everything is well combined.
Once your chicken is all cooked and shredded, add your chicken to the sour cream mixture and mix around until all of the chicken is coated well.
You can use romaine lettuce or iceberg lettuce. Its personal preference really. I just like the taste of iceberg better. when you break up some pieces for your chicken salad, add a good scoop full to your lettuce bowl.
