Pineapple Basil Cocktail

This pineapple basil cocktail screams summer. Sweet pineapple juice mixed with muddled basil. It is the perfect light cocktail!

I’m thinking that somewhere in the world, this drink is existent, and I’m not the sole creator, unfortunately.

One night, I was craving a nice, light cocktail that wouldn’t leave me feeling bloated and full. I had some fresh basil that was on its last leg, and fresh cut up pineapple that was also on its last leg.

A lightbulb went off above my head, and I decided to out together a cocktail using those two ingredients, plus more.

I muddled the basil to get out the flavors. I squeezed some fresh pineapple juice, added some lime sparkling water, squeezed some lime juice in, added some vodka, then ice and of course a cute garnish.

I smelt it before taking a sip, and it smelt a little iffy at first. But when I tasted the first sip, my thoughts about the scent vanished. My taste buds were dancing. It was so so good!

Alot of people don’t think to incorporate fresh herbs into a mixed drink, but its amazing! The flavors of fresh herbs pair so well with liquor, fresh citrus and fruit!

I actually remember seeing a mixed drink on a bar menu that had fresh herbs a few years ago, and thought to myself “ew…really? thats a thing?”.

Sometime after that, I decided to try one, and I was surprised at how good it actually was.

I do have a little herb garden I grow in the summer. I might just have to grow extra this year to incorporate into my summertime cocktails!

Pineapple Basil Cocktail

Servings 1 Drink

Ingredients
  

  • 3-4 Cubes Fresh Cubed Pineapple
  • 3-4 Fresh Basil Leaves, muddled
  • 1 Shot Vodka
  • 1 Cup Lime Sparkling Water
  • 2 Slices Lime

Instructions
 

  • Stack your basil leaves on top of each other and roll them. Slice them into thin rolls. Add the basil to the glass you are going to drink from.
  • Using a muddler, or the end of a wooden utensil, muddle the basil until it becomes very fragrant.
  • Squeeze your lime juice into glass.
  • Using a citrus squeezer, squeeze pineapple juice into glass.
  • Add your vodka, and sparking water (leaving rooms for some ice).
  • Stir drink. Add ice and basil leaf garnish with lime slice (optional).
  • Enjoy!

Notes

**This recipe makes one drink. If you are making more than one drink, make sure to double on the amount of shots and ingredients.
