Roasted Sweet Potato Tacos

Roasted sweet potato tacos are perfect for any type of lifestyle when it comes to food! Its good for gluten free, vegan, vegetarian, meat eaters, and inbetweeners!

We’ve been watching all of these eye opening documentaries on plant based diets, and it really got us thinking.

I was a vegetarian for about 5 years straight, and tried the vegan diet for a few weeks a while back, but that did not last long. I love my cheese WAY too much.

It was this past summer when I took a bite of my first burger I had in 5 years. It was delicious, to be completely honest. And after that I was on a burger kick, and was eating all meats. But, I always feel horrible after eating beef or pork. Not just the thought of eating what once was a live and adorable animal, but also just not feeling my best physically.

I wan to add more vegan/vegetarian friendly options to my blog. I agree with that lifestyle 100%, and I want to cater to everyones lifestyles when it comes to food!

There are several brands and options to choose from when it comes to plat based meat crumbles for tacos and such. I never really found one that I actually enjoyed. Not to mention, the ingredients list was a little large for my liking. So, plan b…roasted veggies!

You can roast pretty much any vegetable, add it to a tortilla and call it a taco! But you have to have the right seasonings!

A variety of spices are key to any plant based recipe! You want your food to taste flavorful, not blah and bland! So don’t be afraid to use a great mixture of seasoning!

This is my favorite part of the entire recipes. If you didn’t already know this, you can make pretty much any vegan cream sauce using cashews! Its amazing! No dairy used here!!

The crema (which is a fancy Mexican word for heavy cream sauce) is a mixture of cashews, spices, lime juice and water! It has a nice hearty smokiness from the smoked paprika, and creaminess from the cashews!

It is the perfect topping for this taco recipe!

Roasted Sweet Potato Tacos

These roasted sweet potato tacos are completely plant based and vegan! Topped with a delicious and creamy, smoky cashew crema!

Ingredients
  

For Sweet Potatoes

  • 2 Large Sweet Potatoes, peeled and diced into small cubes
  • 1 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Salt
  • Juice of Half a Lime

For The Crema Sauce

  • 1/4 Cup Cashews, raw and unsalted
  • 1 tbsp Chili Sauce, I used Cholula
  • 1 Clove of Garlic
  • 1/4 tsp Chili Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 Cup Water
  • 1/4 tsp Salt
  • Juice of other half of lime
  • Fresh Cilantro for garnish (optional)

Instructions
 

  • Preheat oven to 425°.
  • In a large bowl add cubed sweet potatoes and all ingredients listed for sweet potatoes. Mix everything until well combined.
  • Line a large baking sheet with parchment paper or spray. Bake in oven for 30-35 minutes. Potatoes are tender and soft when done.
  • In meantime, make your crema sauce by adding all ingredients for crema sauce in food blender, or blender. Blend well until smooth.
  • I warmed my corn tortillas up on a baking sheet in the oven on the bottom rack the last 5 minutes of the potatoes cooking time.
  • Assemble your tacos by adding some sweet potatoes to tortillas, drizzling some crema sauce over potatoes and sprinkling some fresh cilantro on top!
  • I also added my leftover limes from the lime juice for garnish!
