Blueberry season is here! Making these blueberry muffins with cream cheese streusel is the perfect way to use up those delicious wild blueberries!
Blueberry muffins obviously have blueberries in them. But sometimes there can be too many blueberries in one muffin, and not enough muffin!
These muffins have the perfect amount of blueberries. Not too many, but not too few. There will be a piece of blueberry in every bite!
The batter for these muffins isn’t your typical muffin batter. Its not watery and runny. It’s more silky and stiff, if you will. Which is a good thing, because thats a sign of what will be a moist muffin!
Ok, I cant forget to talk about the delicious cream cheese streusel on top! It’s a mixture of melted butter, sugar, oats, flour and yup…cream cheese!
Usually, streusels are more dry and crumbly, which this mixture is after mixing almost all of the ingredients together.
But when you add the cream cheese, it will become sticky and creamy, unlike most streusels. And thats exactly the texture you want.
A little tip…its way easier mixing the cream cheese in with the crumble mixture with your hands!
There it is. It’s more of a doughy consistency than a crumble.
Again, because this streusel is sticky, it’ll be a little messy placing it on top of the muffins. But, thats ok! Thats what soap and water is for. To wash food off your hands!
