Banana Sprinkle Muffins

These banana sprinkle muffins are the perfect sweet treat! Made with bananas and cake mix! Sweet, fluffy and dense. Bursting with colorful sprinkles. Kids will love them…and adults!

Who doesn’t like a sweet treat with colorful sprinkles?! I do! And these banana sprinkle muffins are just that. Colorful, sweet, fluffy, dense and delicious!

I was a little confused as to what category to list these guys under. They are technically a muffin, but could also be a cupcake. They have bananas in them, so they could be a breakfast item, or dessert…

I’ll let you decide when you want to eat them and what you want to call them!

The only reason why I wouldn’t list these as breakfast, is because they are made with confetti cake mix…but then again, there are three bananas in them! Sooo….

And thanks to those bananas, these muffins are so moist!

Kinda like banana bread, but a little sweeter, with a cake flavor. Yum!

If I could, I would put sprinkles in everything I bake! They make anything look more appealing to eat! Who said sprinkles are only for kids?

Excuse me, I’m 33 years old and still ask for rainbow sprinkles on my ice cream…no shame!

• 3 ripe bananas
• 2 large eggs
• 1 box of confetti cake mix
• rainbow sprinkles

Method

 

1. Preheat oven to 375°. Spray a muffin pan with non stick spray, or line with liners and set aside.
2. In a large mixing bowl, add bananas and smash with a fork until nice and smooth. No large clumps.
3. Add eggs to bananas and mix together with electric handheld mixer until smooth.
4. Add cake mix and mix until fluffy and comined.
5. Spoon batter into greased or lined muffin tins. Filling about 3/4 of the way.
6. Sprinkle rainbow sprinkles on top of each muffin.
7. Bake in preheated oven for 12-15 minutes, or until a toothpick comes out clean when inserted in middle.
8. Let cool completely before removing from pan.
9. Enjoy!
