Method
- Preheat oven to 400°.
- Place cauliflower florets in disposable aluminum pan or a baking dish. Drizzle with 3 tbsps of olive oil, season with salt, chili powder and garlic powder. Mix everything around to evenly coat cauliflower.
- Bake cauliflower in preheated oven for 30-35 minutes, or until the cauliflower start to brown.
- In a medium bowl, mix together the mayonnaise, sour cream, chili powder, cumin, minced garlic and lime juice.
- When cauliflower are done, drizzle with crema and sprinkle crumbled cotija cheese on top.
- Garnish with fresh cilantro and paprika (optional).
