Pistachio Bars With Cream Cheese Frosting

These pistachio bars with cream cheese frosting are the perfect spring time, sweet treat! Bring them to any gathering or BBQ, and they will be a hit.

Soft, sugar cookie bar made with instant pistachio pudding mix gives these bars the perfect pistachio flavor, and color!

My favorite part about these bars is the cream cheese frosting. It is SO GOOD. So soft, smooth, sweet and creamy! It pairs so perfectly with the pistachio flavor.

The frosting was so easy to make too, using a few simple ingredients. I was very please with it!

I’d be lying if I said I didn’t lick the spoon after I was done spreading the frosting. I may or may not have saved a little more frosting to snack on…

Pistachio Bars With Cream Cheese Frosting

Chewy pistachio sugar cookie bars, topped with a homemade cream cheese frosting!

Ingredients
  

Pistachio Bars

  • 2 cups all purpose flour
  • 2 3.4 oz. boxes of instant pistachio pudding mix
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 egg
  • 1/2 cup (1 stick) butter melted
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 cup chopped pistachios

Cream Cheese Frosting

  • 4 oz. cream cheese softened
  • 3 tbsps butter softened
  • 2 tsp vanilla
  • 3 cups powdered sugar
  • 1/3 cup chopped pistachios

Instructions
 

For Bars

  • Preheat oven to 350°.
  • In a large bowl, combine flour, pudding mix, sugar, and baking powder.
  • In another bowl, combine egg, melted butter, oil, milk and vanilla.
  • Mix the egg mixture into the flour mixture, stirring until just blended. Mix in pistachios.
  • Press the dough into a lightly greased 9×13 inch pan.
  • Bake in preheated oven for 18-22 minutes, or until the edges are lightly browned.
  • Cool completely in the pan on a wire rack.

For Frosting

  • In a large bowl, combine cream cheese, butter, and vanilla. Gradually add the powdered sugar and beat until light and fluffy.
  • Spread over the cooled bars, sprinkle chopped pistachios on top. Cut into 24 squares.
