Who doesn’t love a good meatloaf?! This recipe for crockpot meatloaf will be your new way of making any type of meatloaf! It’s way more convenient.

Mix the ingredients together, form a loaf, place it in the crockpot and forget about it! Well…at least until its done cooking!

If you make a lot of slow cooked meat recipes, you know the taste and texture I’m talking about. That hearty, tender slow cooked taste!

No chance that this meatloaf is dry! It was so juicy, yet it stayed together very well for when I cut into it!

You can dress your meatloaf with whatever you’d like. I just used good old ketchup for mine.

Don’t get me wrong, I still love a bake meatloaf. But I have never tasted a better meatloaf than this one! Slow cooking it gave it a nice crunchy, brown crust all around!

When you read the recipe, you will see that you use one whole, diced onion to lay on the bottom of the crockpot. Its a nice bed for your meatloaf, to prevent the bottom burning!

Crockpot Meatloaf

This recipe for crockpot meatloaf will put baked meatloaf to shame! It is so juicy and tender. The flavors are amazing! Throw it in, and forget about it!

Ingredients
  

  • 2-3 lbs. ground beef
  • 2 cups Italian bread crumbs
  • 1 green bell pepper, diced small
  • 2 sweet onions
  • 1 celery stick
  • 1 garlic clove
  • 1 tablespoon italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 6 tablespoons beef broth
  • 1/2 teaspoon salt

Instructions
 

  • Slice one of the onions and place in bottom of crockpot, making a bed for the meatloaf so it doesn't burn.
  • In a large bowl combine all of the ingredients, and mix very well until combined.
  • Form meat mixture into a smooth loaf. Place on top of onions, cover crockpot and cook on low for 6 hours or on high for 4 hours.
  • Dress the top of your meatloaf with whatever you'd like. I used good old ketchup. Cover crockpot and cook for an additional 35 minutes.
  • Enjoy!
