Slow cooked, shredded chicken is one of my go-to’s when it comes to cooking chicken. Its easy, and super tasty! And this jerk pulled chicken with sweet corn cakes will be a new go-to!
I think it tastes better than any baked or grilled chicken, in my opinion. I may be a food blogger, but every time I bake chicken, or grill it, it always comes out dry! I make sure to not overcook it. But for some reason, it just doesn’t work out for me.

Enough about jerk chicken though, lets talk about these delicious sweet corn cakes! They are soft on the inside, and have a nice crunch on the outside. They pair perfectly with the chicken!
