These lucky charms cookies are the perfect sweet treat to bake with your kids, or yourself! They are so colorful, and delicious!

When I was a kid, Lucky Charms cereal was my absolute favorite. It was a treat to get it once in a while. Nothing like a big bowl of sugar in the morning!

Just the smell and taste of these cookies brings me way back. They taste and smell JUST like the cereal, because there is crushed up cereal in the cookie base!

I can’t even tell you how tempting it was for me to eat a bowl or three of this cereal before using it for this recipe! Lucky the leprechaun is right when he says “they’re magically delicious!”. They really are…

These cookies are basically sugar cookies, but better! Every bite has at least one marshmallow. Ugh, those crunchy, sugary marshmallows are so good! I’m sure a lot of you guys did what I did as a kid…picking out all of the marshmallows, leaving none for anyone else. Oops. I blame my massive sweet tooth on that one!

Lucky Charms Cookies

These lucky charms cookies are the perfect sweet treat! Chewy, fun and loaded with marshmallows. Crushed lucky charms cereal adds the best flavor!

Ingredients
  

  • 1/2 cup crushed Lucky Charms cereal (no marshmallows)
  • 1 cup Lucky Charms marshmallows plus more for adding on top of the cookies (optional)
  • 1 cup salted OR unsalted butter, soft
  • cup white granulated sugar
  • 1 large egg
  • teaspoons vanilla extract
  • 2 cups plus 2 tablespoons all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350°. Line a large baking sheet with parchment paper, or non stick spray.
  • Sort Lucky Charms cereal so you have 1 cup of marshmallows (plus more for adding on top of the cookies if you want) and 1/2 cup of cereal crushed. Set marshmallows aside.
  • You can crush the cereal using a food processor, blender, or adding it to a ziplock bag and crushing until no large pieces remain. Set aside.
  • In a large bowl in stand mixer with paddle attachment or handheld mixer, beat butter and sugar together until light and fluffy.
  • Add in the egg and vanilla, mix until well incorporated.
  • In a large bowl whisk flour, baking soda, baking powder, salt and crushed cereal together.
  • Pour dry ingredients into the wet and mix well.
  • Carefully fold in luck charms marshmallows.
  • Using a cookie scoop/ ice cream scoop thats about
  • Push some extra marshmallows on top of each cookie dough ball. This is optional but it gives the cookies an extra pop of color!
  • Bake in preheated oven for 12-15 minutes, or until the bottoms are golden brown.
  • The cookies will look and feel uncooked and really soft, but they will firm up as they cool.
  • Enjoy! Store the rest in an air tight container.
