This recipe for Mexican street corn cauliflower uses cauliflower as the base, instead of corn. And it is life changing.

I have to be honest. I am not a huge fan of cauliflower. Ive tried multiple times to switch things up and have cauliflower rice, cauliflower pizza crust, mashed cauliflower, ya know…all things low carb. But it just wasn’t doing anything for me.

It’s all about the seasonings and sauces!

Cauliflower is super bland by itself. We all know that. But when you season it with the right seasonings, and dress it with the most flavorful sauces and toppings, it turns into a party!

Cilantro, lime, garlic, cotija cheese, mayonnaise, sour cream…shall I go on?

This is the perfect, low carb side. And its great for all of those cookouts you have coming up.

You can bake it right in a foil pan, and throw it away after! Easy recipe, easy clean up.

Mexican Street Corn Cauliflower

Ingredients
  

For The Cauliflower

  • 1 large head of cauliflower, cut into florets
  • 3 tbsps olive oil
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder

For The Crema

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 2 cloves of garlic, minced
  • 2 tsps lime juice
  • 1/3 cup crumbled cotija cheese
  • paprika for garnish (optional)
  • fresh cilantro, chopped (optional)

Instructions
 

  • Preheat oven to 400°.
  • Place cauliflower florets in disposable aluminum pan or a baking dish. Drizzle with 3 tbsps of olive oil, season with salt, chili powder and garlic powder. Mix everything around to evenly coat cauliflower.
  • Bake cauliflower in preheated oven for 30-35 minutes, or until the cauliflower start to brown.

Make Crema

  • In a medium bowl, mix together the mayonnaise, sour cream, chili powder, cumin, minced garlic and lime juice.
  • When cauliflower are done, drizzle with crema and sprinkle crumbled cotija cheese on top.
  • Garnish with fresh cilantro and paprika (optional).
  • Enjoy!
