I love to experience with new grains that I come across in the grocery store! And thats how this millet with sautéed kale and mushrooms recipe came about.
Yes, good old rice or couscous is great to cook with. But both aren’t packed with nutrients like millet! I was on a quinoa kick for a while, but honestly I was starting to get sick of it. And I must say, I like millet better than quinoa!
If you season it just right with the right amount of salt, its honestly delicious! It has a mild sweetness to it, and it fluffs up very nicely.
Do you like kale? Have you ever tried kale? Remember, don’t knock it until you try it! It is 2019, almost 2020, and kale has been a fad for quite sometime now. And I think its sill that I am JUST figuring out that baby kale is MUCH better than regular kale. Its not as tough and the flavor is way tastier.
Kind of like baby spinach. I think it’s better than regular , full grown spinach, if you will.
Okay, my nest question is, do you like mushrooms? I absolutely love them! I can eat them raw, right from the package for a snack! But, if you’re like my husband, and kind of on the fence when it comes to mushrooms, then try marinating them first before cooking them! Like I did for this recipe. It adds so much flavor to the mushrooms!
So, you know how when you cook spinach, it wilts down to literally nothing? The same thing happens to kale. We use an entire package of kale for this recipe, and you would never even know!
See!? Look at all of that kale!!…but then…it suddenly disappears into nothing…
