Tis the season of cookies. Christmas is my absolute favorite holiday. Not just because of all the cookies I get to make and consume, but because it brings family and friends together. The cookies help too…
I have to give my Grammy credit for this recipe. After all, it’s hers. She made a plate of Christmas cookies every single year. These would always be the first ones Id go for. Followed by the good old snowball cookies. Those delicious, buttery, white powdery cookie balls with walnuts. Yum!
These mocha nut balls are very similar to snowball cookies. They just have chocolate and mocha in them.
Now, it is the holidays. That is my full excuse for eating way unhealthy. These cookies are about 90% butter and 10% flour. But that’s ok. Like I said, it’s the holidays!
For this recipe, you will need flour, white sugar, instant coffee, unsweetened cocoa powder, butter, salt, walnuts, water, confectioners sugar, and vanilla extract.
To prepare, you want to make sure to chop your walnuts finely. I used my food chopper for this. If you don’t have a food chopper, you can use a knife and chop chop away.
You want to mix all of your dry ingredients (except walnuts). Whisk or mix together will until everything is combined.
Now you want to add your softened butter to a bowl with stand mixer or a bowl with hand held mixer.
Add your combined dry ingredients to the butter and cream together. During this process, add your water and vanilla. Continue to mix until ingredients become well combined, and dough starts to form and become hard.
The dough will turn into this delicious dark chocolate color, and will resemble fudge. This is the part of the cookie making process where you have to stay strong and not eat the cookie dough! Because its going to smell amazing…
Now you want to add your chopped walnuts to the dough and mix them well into it.
Roll the dough out into balls about 1 inch. Place on a parchment sheet lined baking pan.
They don’t spread out much when baking so don’t worry about spacing them out too much.
Bake in preheated oven for 15 minutes. Don’t over bake them. They will be soft during the cooling process, but they will harden to a perfect consistency once completely cooled.
Once they are done, Let them cool for 10 minutes before coating them with confectionary sugar.
If you roll them in the sugar while they are too hot, the sugar will just melt and turn into goop.
You want them to be cooled enough so the sugar sticks and doesn’t melt.
During this process, you may be very tempted to try one. If you are like me, and fall into temptation…be careful! You will start out with 24, but end up with 15…oops…
Roll the cookie balls into confectioners sugar. Make sure to get it all around. Place on a cooling rack and repeat.
Look at those delicious, sugar-coated mocha balls! They are seriously perfection in one bite! Or two…
