This no-bake s’mores cheesecake is so easy and delicious! Ooey gooey roasted marshmallows, chocolate goodness, and crunchy graham cracker. What else could you ask for in one bite?!
Not to mention, this cheesecake looks absolutely beautiful!
There are only 6 ingredients for this cheesecake, which is amazing.
Mini marshmallows, marshmallow fluff, cream cheese, ready pie crust, graham cracker crumbs, and chocolate chips OR Hershey’s chocolate fudge.
Now, before I get into this recipe, I would like to note that I would absolutely recommend you using a chocolate fudge for the topping instead of melted chocolate chips. Just because when the melted chocolate chips harden back up, it makes it a little difficult to cut into the cake. You can find any chocolate fudge topping near the ice cream toppings in any grocery store.
So first things first you want to combine together your entire jar of Fluff and your softened block of cream cheese. You can use a hand-held mixer, or standing mixer. It doesn’t matter. Mix until the batter looks fluffy.
Once your mixture is ready, pour into ready crust and spread around evenly.
Next you want to add your mini marshmallows. Make sure they are spread out evenly, and not on top of each other.

That is all you want to do for now! So set the cover on the cheesecake and let it sit in the fridge for a few hours/overnight if need be.
Once it is set, and you are ready to serve it, it is time for the fun part!
**It is important to do this step RIGHT before serving the cheesecake. The reason why is that if you roast the marshmallows ahead of time and let them sit, the consistency of them tends to get thicker, and harder to eat, and cut into the cake. But I am sure it would still taste good! Just would be a little messier…
Preheat your ovens broiler to low heat. I don’t know about you, but my broiler intimidates me. You always always always want to make sure that you are right there, looking into your ovens window, with the light turned on so you can see the “roasting” process of your food. It only takes literally a few seconds to get the roasted look to your marshmallows.
Place the cheesecake on your middle rack, and let it broiler for 30 seconds or less. Every ovens broiler is different. Some are stronger than others. Your broiler may take more or less time, so make sure to keep an eye on it! Once your marshmallows have that perfect golden brown color to them, they are done!
Next you want to add your toppings. If you are using the chocolate chips, make sure to melt them according to the packages melting directions. Once the chocolate is melted, place in a plastic baggy and cut the tip off of one of the corners of the baggy to create your own decorating bag. Drizzle on top of the marshmallows.
If you are using the chocolate fudge topping, heat up the fudge, add it in a baggy, cut the tip off of one of the corners of the baggy to create your own decorating bag. Drizzle on top of the marshmallows.
Last but not least, you want to add your crushed graham cracker.
