Pie Crust Cookies

These pie crust cookies are so easy to make, and super cute! But most importantly, delicious! They are soft and comforting. Sprinkled with cinnamon and sugar for that perfect sweetness!

Ok, so I want to start off by saying I randomly thought of this recipe for pie crust cookies last night. I couldn’t sleep, so naturally my brain is going a mile a minute. And I was hungry, so I was thinking of food, and the fact that the holidays are literally right around the corner.

Pie crust is flying off the shelves right now. Everyone is making pies, pies, and more pies. But, not everyone is a fan of pies. I’m not a huge fan myself. Sooo, what else can you make with pie crust dough? Pie crust cookies!!

I mean, come on. How cute are they?! You can use whichever shape you’d like, but thanksgiving is less than a week away, and I happened to have a turkey cutter. So I went with turkeys. But these would be super cute as any shape. They will still taste delicious now matter what!

They are super soft and flaky, just like pie crust usually is when baked! And that cinnamon sugar coating is perfection.

Pie Crust Cookies

These pie crust cookies are so easy to make, and super cute! But most importantly, delicious! They are soft and comforting. Sprinkled with cinnamon and sugar for that perfect sweetness!
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Course cookies, cut out cookies, pie crust

Ingredients
  

  • 1 sheet premade pie crust I used pillsbury
  • 2 tablespoons cinnamon
  • 2 tablespoons granulated sugar

Instructions
 

  • Preheat oven to 360°.
  • Mix cinnamon and sugar in a small bowl and set aside.
  • On a lightly floured surface, roll out pie crust sheet.
  • Using cookie cutter of choice, cut out shapes and place on lined baking sheet (may need two baking sheets) until pie crust dough is gone.
  • Sprinkle cookies with cinnamon sugar mixture.
  • Bake in preheated oven for 10 minutes. Cookies may bubble, but thats ok! I think it gives them more character 🙂
  • Let them cool a bit, and enjoy!
