Baked Caprese Chicken

Chicken breast is topped with mozzarella cheese + a mixture of tomatoes, olive oil, fresh garlic and Italian herbs. Drizzled with balsamic glaze.

Nothing quite beats the aromas of fresh garlic and tomatoes roasting in the oven. If you ever want your house to smell like an authentic Italian restaurant…make this dish.

Caprese salad is one of my favorite salads. It’s so simple, yet so flavorful. You can prepare it so many different ways.

Whenever I go out for dinner or lunch, I always look at the salad section on the menu. Usually restaurants will have capers salad. Some restaurants have their own, creative version of it.

A local restaurant from where I live has one of my favorite capers salads. It’s an eggplant caprese salad. Breaded and fried eggplant slices are topped with fresh mozzarella cheese, tomatoes and a balsamic glaze. So so good!

Speaking of fresh mozzarella…its the best! Galbani is my favorite brand for fresh mozzarella. Its decently priced as well. They offer a pre sliced ball, which is so convenient for this recipe!

This recipe is as easy as 1, 2, 3. Place a slice of mozzarella cheese on top of the chicken, spoon the tomato and garlic mixture on top of the cheese, drizzle balsamic glaze on top and bake. Thats it!

Look at all of that melty cheese. Yummm! I can’t lie…that was my favorite part. The flavors from the roasted garlic and tomatoes, mixed with the Italian herbs and sweetness of the balsamic. Its the best!

Baked Caprese Chicken

Servings 4 Chicken Breasts

Ingredients
  

  • 1 LB. Chicken Breast Cutlets Mine were thinly sliced
  • 1 Large Roma Tomato, finely diced
  • 1 TBSP olive oil
  • 1 Clove Garlic (minced)
  • Fresh Mozzarella Cheese Ball
  • Dried Basil
  • Dried Oregano
  • Salt, Pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Line a baking sheet with a non stick liner or spray.
  • In a small bowl, mix together your diced tomato, basil, oregano, salt, pepper, garlic and olive oil. Set aside. **Please note, I did not use any measurements for the spices. For each spice, I used about 3-4 shakes.
  • If your mozzarella cheese ball doesn't come pre sliced, than slice thin slices of cheese for however many chicken breasts you have.
  • Lay out chicken breasts on baking sheet. Place a slice of cheese on top of each chicken breast, in the middle.
  • Spoon your tomato and garlic mixture on top of the cheese.
  • Drizzle balsamic glaze on top of each piece of chicken.
  • Bake in preheated oven for 25 minutes.
