These roasted cabbage steaks, drizzled with honey dijon mustard are the perfect side dish, or meal! The flavors are incredible, and they are so easy to make!

Cabbage is definitely overlooked when it comes to vegetables and side dishes. For me at least. Which is a shame, because cabbage has so many health benefits, and nutrients to offer.

I know, it can be pretty bland. But when you add spices and flavor to it, it is actually delicious!

Olive oil and spices can do wonders to many vegetables. Cabbage is one of these vegetables. Although, cabbage isn’t bad raw. It has a nice hint of sweetness, and a great crunch!

Ok, so back to the awesome nutrition and health benefits that cabbage has to offer…

It contains a high amount of vitamins and nutrients that help with the digestive system and metabolism. It contains a lot of probiotics and fiber, along with alot of antioxidants that help protect against and fight off viruses and diseases. Sounds good to me! Bring on the cabbage!

I must say, the drizzled honey dijon mustard on top adds the perfect finishing flavor. It blends with the other flavors and compliments them so well.

I can’t forget to mention…the outer pieces of the cabbage steaks that are burnt…those are the best! They have a great crunch and flavor to them.

Roasted Cabbage Steaks With Honey Dijon Mustard Drizzle

Servings 7 Cabbage Steaks

Ingredients
  

  • 1 Head Green Cabbage Depending on how many people you are feeding, look for a smaller or larger head of cabbage to get more steaks.
  • olive oil
  • Salt, Pepper
  • Onion Powder
  • Oregano
  • Honey Dijon Mustard, for topping
  • Roasted Garlic & Herb Blend I used McCormicks Grill Masters

Instructions
 

  • Preheat oven to 425 degrees.
  • Prepare a large baking sheet with non stick spray, or liner.
  • Take head of cabbage and peal off the first layer if they are loose. Cut off bottom end where steam was.
  • Slice entire head up into 1/2 inch thick steaks. (layers will be falling off while you do this. Thats ok. Just try and keep them together as well as you can.)
  • Place each steak flat down on baking sheet. Drizzle each steak with olive oil. Only the side that's facing up.
  • Sprinkle each steak with spices (salt, pepper, onion powder, oregano, roasted garlic & herb blend) about one pinch or a couple shakes of each herb for each steak.
  • Cook in preheated oven for about 25-30 minutes. When the outer layers of the cabbage start to crisp up and almost burn, they are done.
  • Immediately after they are out of the oven, drizzle honey dijon mustard on top of each steak. To make this easy, I poured my mustard inside a ziplock baggy, cut a corner tip off the bag and squeezed it out.
