Shredded Chicken Salad Lettuce Bowls

If you’re looking for a low carb meal that will fill you up, and tastes amazing…this shredded chicken salad lettuce bowl recipe is it! Shredded chicken is mixed with creamy sour cream, sweet pickles and smoked turkey bacon, giving it a sweet, savory and smokey flavor. Served in a crisp and crunchy lettuce bowl.

I am usually one to stay away from chicken salad, tuna salad, or any type of salad that usually goes in a sandwich or wrap. Just because of the amount of mayonnaise they usually have. Don’t get me wrong…I love mayonnaise, But I am trying to be healthy and good when it comes to eating for the new year.

I was trying to think of different ways I could make a healthier version of chicken salad. Of course, you could always use low fat, fat free mayonnaise or a mayonnaise that contains a different fat like olive oil, or canola oil…

But sour cream came to my mind. I do love my sour cream. Low fat sour cream that is. It tastes just as good as full fat sour cream, in my opinion. Then I thought of adding some sweetness to the mix. Sweet pickles. YUM!

Chicken tenders, garlic powder, onion powder, salt, pepper, sweet pickles. sour cream, turkey bacon, and iceberg lettuce (or romaine). Thats all of the ingredients you need for this recipe, and chances are you already have half of them.

You want to make sure you season your chicken tenders with some salt and pepper before baking them. It brings out a nice flavor.

In a large bowl, you want to mix together your sour cream, chopped up pickles, garlic powder and onion powder.

Add your cooked and crumbled turkey bacon. Mix around until everything is well combined.

Once your chicken is all cooked and shredded, add your chicken to the sour cream mixture and mix around until all of the chicken is coated well.

You can use romaine lettuce or iceberg lettuce. Its personal preference really. I just like the taste of iceberg better. when you break up some pieces for your chicken salad, add a good scoop full to your lettuce bowl.

Shredded Chicken Salad Lettuce Bowls

Servings 6 Lettuce Bowls

Ingredients
  

  • 1 lb. (6-8 Pieces) Chicken Tenders Baked, shredded
  • 1 Large Head of Iceberg Lettuce You can use romaine as well
  • 1 Cup Light Sour Cream
  • 1 Cup Sweet Pickles, chopped up
  • Salt & Pepper to taste
  • Garlic Powder, Onion Powder , to taste
  • 1 Cup Turkey Bacon, Cooked, Crumbled about 4 pieces

Instructions
 

  • Preheat oven to 375 degrees. Line baking sheet with parchment paper or non stick spray.
  • Lay out chicken tenders. Season with salt and pepper. Bake in preheated oven for 20 minutes.
  • In meantime, cook your turkey bacon according to package directions.
  • When bacon is cooked, let cool a bit before crumbling.
  • In large bowl, mix together sour cream, chopped pickles, garlic powder, onion powder. Mix to combine.
  • Add crumbled bacon. Mix together.
  • When chicken is done, let cool enough to handle. Shred chicken up with a fork or your fingers. Add chicken to sour cream mixture.
  • Mix everything around well until combined.
  • Prepare your lettuce bowls. Add a large heaping spoonful to each lettuce bowl. Enjoy!!

Notes

Left over chicken salad keeps well in a tightly sealed container, in refrigerator for no longer than a week.
