1/2cup(1 stick) unsalted butter, cold and cut into cubes
2/3cupcold buttermilk
1large egg, yolk and white seperated
12oz.jar of roasted red peppers, chopped
Instructions
Preheat oven to 400°.
In a large bowl, whisk together flour, sugar, baking powder, salt and pepper. Stir in shredded cheddar.
Add the cold, cubed butter to flour mixture and cut in using a pastry cutter, a fork, or your hands. You want the mixture to be nice and crumbly. With no big butter chunks.
In a small bowl, whisk together buttermilk and egg yolk. Pour over the flour mixture. Add your chopped red peppers and mix until everything is well combined, and dough clumps together. Dough will be sticky.
Pour dough onto a well floured surface. Sprinkle some more flour on top of dough and on your hands. Shape dough into an 8 inch disc, using as much flour as you need to prevent dough from sticking to surface or your hands.
Cut into 8 triangles, and place scones on a lined baking sheet.
Brush tops of scones with egg white.
Bake in preheated oven for 22-25 minutes, or until scones start to turn a light golden brown.
