Slow Cooker Shredded Taco Chicken

This slow cooker shredded taco chicken is so easy and delicious. Using simple ingredients that you most likely already have!

Slow cooker shredded taco chicken is the perfect recipe for those days where you just don’t have it in you to cook. Just throw every ingredient into your slow cooker and call it a day!

It is so delicious, and you can even make double so you have left overs throughout the week.

All of the ingredients used in this recipe are pretty basic ones. Chances are you already have most of the ingredients you need.

The most important ingredient/ingredients are the herbs and spices. After all, this recipe is called taco chicken. So it only makes sense to give the recipes all of those delicious taco seasonings! And these seasonings give this recipe so much flavor!

Of course, you can always use a package of taco seasoning if you don’t happen to have all of the spices you need to make your own. But I prefer to make my own.

Like I already said, this recipe is as easy as throwing all of the ingredients into your slow cooker and letting it cook. Just like most slow cooker recipes.

The only ingredient that is missing from this photo is the onion. I decided to add a chopped up onion to the recipe after I took this photo and forgot to take an updated photo of the onion addition. Opps!

But I’m glad I decided to add an onion, because it added so much flavor!

Its crazy how tastier chicken is when its slow cooked. I can honestly say I’m not a huge fan of baked chicken. Fried chicken however is a different story. Of course I’ll eat fried anything, no problem. But slow cooked is the way to go!

Of course, you can serve this shredded chicken however you’d like. I served mine on top of some rice!

Slow Cooker Shredded Taco Chicken

This slow cooker shredded taco chicken is so easy and delicious. Using simple ingredients that you most likely already have!

Equipment

  • slow cooker

Ingredients
  

  • 2 lbs. chicken breast, boneless and skinless
  • 1 medium sweet onion, diced
  • 14.5 oz. can of diced tomatoes, drained
  • 1/2 cup salsa
  • 1/2 cup jarred jalapeños, diced
  • 1/3 cup chicken broth
  • 1/2 cup sour cream
  • chives for garnish (optional)

For Taco Seasoning (see note)

  • teaspoons chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • teaspoons ground cumin
  • teaspoons salt
  • 1 teaspoon black pepper

Instructions
 

  • Add chicken breasts to bottom of slow cooker.
  • Add taco seasoning on top of chicken, followed by the rest of the ingredients (except chives if using).
  • Cook on high heat for 4 hours or low heat for 6 hours.
  • When time is up, take chicken out of slow cooker and shred with fork. Place chicken back in slow cooker and cook for another 5 minutes.
  • Serve however you would like. I served mine over rice and sprinkled fresh chives on top!

Notes

For taco seasoning : you can use a package of taco seasoning if you prefer that instead!
