Smoky Beef And Guacamole Bowls

These smoky beef and guacamole bowls are the perfect meal if you are trying to eat healthy. Cauliflower rice is seasoned with salt and a hint of lime, topped with sweet and smoky grass-fed beef and guacamole!

Smoky beef and guacamole bowls are pretty much self explanatory. But you may be curious as to why it’s called “smoky beef”. Obviously something has to give it a smoky flavor to live up to its name. Right?

Here it is. The smoky salsa sauce I call it. It’s a mixture of only whole ingredients blended together.

Garlic cloves, tomato salsa, salt, smokey paprika and olive oil. Thats it!

Blend it together, and what do ya got? You got yourself a delicious, and amazing sauce to mix together with your beef!

Oops, can’t forget about the baby Bella mushrooms! If you aren’t a fan of mushrooms, you can leave this ingredient out of course.

When you add the smoky salsa sauce to your beef, and let it simmer together and marry, it smells absolutely amazing!!

For this recipe, I used cauliflower rice, which is actually really good if you season it correctly! I seasoned mine with plenty of salt and some lime juice, and wow!

Have you ever made guacamole? For this recipe, we are putting together a quick one. Just some mashed avocado, salt, red onion and lime juice.

Then, you’ll be ready to create your bowls! It is delicious, filling, and you don’t have to worry about working it off the next day. Winner!!

Smoky Beef And Guacamole Bowls

Servings 4 People

Ingredients
  

  • 1 lb. Grass-Fed Ground Beef
  • 8 oz. Baby Bella Mushrooms, cut into slices
  • 2 12 oz. Bags Of Cauliflower Rice, frozen
  • 1 Lime
  • 2 Avocados
  • 1/2 cup Red Onion, minced

Smoky Salsa Sauce

  • 1/2 tbsp Smoked Paprika
  • 3 Cloves Of Garlic
  • 3/4 cups Tomato Salsa
  • 2 tbsp olive oil
  • 1/2 tsp Salt
  • 1 tsp Honey

Instructions
 

  • Cook cauliflower rice in microwave according to package directions. Set aside.
  • In a food blender or processor, add all ingredients for smoky salsa sauce. Blend until smooth and well combined. Set aside.
  • In a large sauté pan, cook beef and mushrooms on medium high heat. Cook until beef is done.
  • Add smoky salsa sauce to the beef and simmer for a few minutes, until everything becomes thick and bubbly.
  • Make your guacamole by mashing avocados and adding in onion and juice of half of lime.
  • In a bowl, add cauliflower, plenty of salt and juice of other half of lime and mix together.
  • Make your smoky beef and guacamole bowls by spooning some cauliflower rice into personal serving size bowl, add some beef on top, along with some guacamole. Top with some more red onion if desired.
  • Enjoy!
