Parmesan Creamed Sweet Onions

Oh my goodness…I almost named this recipe “OMG Onions”, but I felt like that wasn’t specific enough. These parmesan creamed sweet onions are to die for! I am not over exaggerating. I swear…if you like onions, and creamy cheesy goodness, then this recipes is screaming your name. These sweet onions are roasted in cream and parmesan cheese until they are soft and tender.

The taste of sweet onion, cheese and cream…what else could you ask for?

Onions are one of my favorite vegetables to cook with. They have so much flavor to offer. Especially sweet onions. I don’t know about you, but when I think of side dishes, I think of the typical vegetable…not an onion!

I am so happy I came across this recipe from @bellyfull on Pinterest. Even though I used some of the same ingredients as the original recipe creator, I cooked them a different way, and left out some ingredients.

This simple and delicious recipe only calls for onions, half and half, grated parmesan cheese, olive oil, salt and pepper.

Sounds like ingredients that are most likely always hanging around your pantry or fridge!

Of course, you want to take the skin off of your onions before you start cutting them into rings. I usually take the skin off, and then the first layer of the onion off. I always find the first layer to be tough and not as tender as the rest of the onion.

You want to slice your onions into rings, not too thick, making sure to keep the rings together for each slice.

Add the sliced onions to a heated pan with olive oil, and brown on each side for about 2-3 minutes per side. Until they turn brown and start to turn translucent. Make sure you don’t burn them.

Now, if you don’t happen to keep the onions together its ok. It was pretty difficult to keep them together when I tried flipping them, as you can see. But try to make sure you keep them together for the most part.

Turn down your heat to simmer, gently pour half and half over the onions, sprinkle the cheese on top evenly, a sprinkle of salt and pepper. Cover and let simmer for about 10 minutes.

After the 10 minutes is almost up, everything will start to look bubbly and thick. That’s what you want!

Its time to bake in the oven for about 5-7 minutes. Make sure the pan that you cook your onions in is an oven safe pan. When edges start to bubble and top browns, its done!

And just like that, you have the most amazing side dish! Insert drooling face emoji here…

I’m telling ya, the smell that this dish gives off will make your moth water before you even try it. Then you will try it, and LOVE it!

I let mine cool off a bit, but not completely. You still want to serve this dish while it’s still on the hot side, but letting it cool allows the cream and cheese to thicken, that way its easier to serve, and the onions get glued together, if you will.

Parmesan Creamed Sweet Onions

Sweet onions roasted in parmesan cheese and cream until they are tender! Perfect side dish, or on top of pasta!
Servings 2 People

Ingredients
  

  • 2-3 Medium Sweet Onions
  • 1 Cup Half and Half
  • 1/4 Cup Grated Parmesan Cheese
  • Salt and Pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees.
  • Peel skin off of onions, and slice them into rings. Keeping each sliced piece of rings together.
  • Over medium heat, heat up olive oil in large oven safe sauté pan. Gently lay down each cluster of onions to pan.
  • Brown onions on each side for 2-3 minutes each side. Be careful not to burn them. You just want to brown them. Its ok if some of the onion clusters fall apart. It was a little tricky to keep them all together while flipping them. I used a pair of large tongs to flip mine.
  • They are done when they are starting to turn translucent, and brown.
  • Turn down the heat to simmer, add half and half to pan, sprinkle parmesan cheese on top of onions evenly, and a pinch of salt and pepper.
  • Cover and simmer for about 10 minutes.
  • Place entire (oven safe) sauté pan in preheated oven and cook for 5-7 minutes.
  • When edges start to bubble, and top turns brown, they are done.
  • Let cool for a few minutes before serving. Enjoy !!
