Preheat oven to 350 degrees.
Peel skin off of onions, and slice them into rings. Keeping each sliced piece of rings together.
Over medium heat, heat up olive oil in large oven safe sauté pan. Gently lay down each cluster of onions to pan.
Brown onions on each side for 2-3 minutes each side. Be careful not to burn them. You just want to brown them. Its ok if some of the onion clusters fall apart. It was a little tricky to keep them all together while flipping them. I used a pair of large tongs to flip mine.
They are done when they are starting to turn translucent, and brown.
Turn down the heat to simmer, add half and half to pan, sprinkle parmesan cheese on top of onions evenly, and a pinch of salt and pepper.
Cover and simmer for about 10 minutes.
Place entire (oven safe) sauté pan in preheated oven and cook for 5-7 minutes.
When edges start to bubble, and top turns brown, they are done.
Let cool for a few minutes before serving. Enjoy !!
