I know its still the season for eating delicious holiday comfort food, but its good to add a healthy recipe in your diet here and there. When I’m stuffing my face with Christmas cookies and desserts, knowing I am mixing some healthy choices with my not so healthy, but oh so worth it choices.
When it comes to recipes with very few ingredients and a lot of flavor, I am a fan. This one skillet turkey and squash bake recipe is exactly that. With only a handful of ingredients, this dish has so many flavors. All thanks to the spices.
You can use a less fatty turkey if you’d like. I prefer to use the 85% lean for more flavor.
First you want to sauté your onions over medium-high heat with some olive oil. Make sure to use an oven safe pan.
Cook the onions until they start to turn translucent and fragrant.
Add your ground turkey to the pan and break it up and blend it with onions.
Add your minced garlic and spices to the turkey mix. Mix around to combine everything. Cook until turkey is done. Make sure you don’t over cook the turkey. It will be cooking for a little longer in the oven.
When your turkey is done, add your cut up squash and tomatoes. mix around together to combine.
Add your cheese on top of everything evenely.
Cook in your preheated oven for 25-30 minutes. You want to make sure your squash is somewhat soft and not still hard. Before taking it out, test the squash to see if it’s done by poking a fork through a piece to see if it’s soft.
Simple, healthy, quick and a very small cleanup. Who doesn’t want that?
