I am so excited to share this almond crusted chicken with maple glaze recipe with you guys! It is honestly so so good, and easy!
There is a restaurant my husband and I go to quite often. They have a meal on their menu that’s almond crusted chicken. It is sooo good! Obviously, I have no clue what their exact recipe is, but I decided to try out my own recipe and I’m glad I did, because A, its amazingly delicious and B, we are saving a lot of money making it ourselves.
The first time I made this recipe, I had my parents over for dinner. I wanted to try making something different and out of my comfort zone!
I wanted to go for a sweet and savory taste. Who doesn’t like those two combined?? I know I do!
Then I thought about the maple glaze that the restaurant we go to uses on top of their almond crusted chicken. I’m not sure if they use just maple syrup, or mix any spices with the maple. I decided to mix some garlic and onion powder in my maple syrup for the glaze. Glad I did!
First, you want to make your maple glaze. The longer the spices sit in the maple, the tastier it is! Set that aside and move on to the next step.
For your coating, you will need butter, salt, minced garlic, crushed almonds and plain panko bread crumbs.
You want to make sure to use plain, raw almonds. Don’t get almonds that are roasted or salted or coated with flavoring.
I used a food chopper to chop my almonds up. If you have a coffee grinder, or blender, you could use those. You just want to make sure to chop them up good. Not too fine to the point where they turn to almond flour.
Whenever there is a recipe that calls for a few tablespoons of butter or more, it’s bound to be a good one.
To make your almond coating, melt your butter in a large skillet over medium heat. Melt it completely.
Add your minced garlic. Cook your garlic until it turns fragrant. This took about 1-2 minutes. You don’t want to burn your garlic.
Add your almonds, salt, panko bread crumbs. Cook for 5-10 minutes. You want to roast the almonds until they turn a nice golden brown. Make sure not to burn the mixture.
When your almond mixture is down, transfer them to a large enough bowl to dip chicken in. Set aside to cool off a bit.
You want to set up your dipping station. In this order : chicken, egg, flour, almond mixture. Make sure you have a large baking sheet prepared with parchment paper or non stick spray to place chicken on.
Bake in preheated oven for 25-30 minutes. It depends on how thick your chicken breast are. Mine were thin and took 25 minutes to cook.
On the last 5 minutes of cooking, spoon the maple glaze mixture on top of each chicken breast. Make sure you pour it on evenly.
Back in the oven they go for another 5 minutes.
This recipe makes about 4-5 chicken breast. If you are feeding a larger crowd, make sure to double up on the ingredients for the almond coating and maple glaze.
Lets just say, my parents were blown away by the taste of this chicken. You can serve it with whatever you would like. I served mine with some roasted Brussel sprouts and butternut squash.
