Method
- Preheat oven to 450 degrees.
- Cook your gnocchi according to package directions. When done, add some olive oil, parmesan cheese, and garlic powder to pot. Mix around until gnocchi is combined with everything. Set aside.
- Dice up your peppers, onion. Cut your cherry tomatoes in half and mince your garlic. Add all of your veggies to a large bowl to mix.
- Add olive oil, salt, oregano and basil to bowl with veggies. Mix around until everything is combined.
- Place a non stick liner on a large baking sheet. Add your veggies and gnocchi on sheet and mix everything around so its in an even layer.
- Bake in preheated oven for 40-45 minutes.
