One Pan Roasted Gnocchi + Vegetables

Servings 3 People

Ingredients
  

  • 14.5 OZ. Gnocchi, cooked I used a bag of frozen gnocchi.
  • 1 Red Bell Pepper, diced
  • 1 Yellow Bell Pepper, diced
  • 1 Small Red Onion
  • 2 Cloves Garlic (minced)
  • olive oil
  • Salt, to taste
  • 1 TSP Dried Oregano
  • 1/2 TSP Dried Basil
  • 1/2 TSP Garlic Powder
  • 1 TBSP Parmesan Cheese, grated
  • 1 1/2 Cups Cherry Tomatoes (halved)

Instructions
 

  • Preheat oven to 450 degrees.
  • Cook your gnocchi according to package directions. When done, add some olive oil, parmesan cheese, and garlic powder to pot. Mix around until gnocchi is combined with everything. Set aside.
  • Dice up your peppers, onion. Cut your cherry tomatoes in half and mince your garlic. Add all of your veggies to a large bowl to mix.
  • Add olive oil, salt, oregano and basil to bowl with veggies. Mix around until everything is combined.
  • Place a non stick liner on a large baking sheet. Add your veggies and gnocchi on sheet and mix everything around so its in an even layer.
  • Bake in preheated oven for 40-45 minutes.
