One Pan Roasted Gnocchi + Vegetables

Servings: 3 People

Ingredients
  

  • 14.5 OZ. Gnocchi, cooked I used a bag of frozen gnocchi.
  • 1 Red Bell Pepper, diced
  • 1 Yellow Bell Pepper, diced
  • 1 Small Red Onion
  • 2 Cloves Garlic (minced)
  • olive oil
  • Salt, to taste
  • 1 TSP Dried Oregano
  • 1/2 TSP Dried Basil
  • 1/2 TSP Garlic Powder
  • 1 TBSP Parmesan Cheese, grated
  • 1 1/2 Cups Cherry Tomatoes (halved)

Method
 

  1. Preheat oven to 450 degrees.
  2. Cook your gnocchi according to package directions. When done, add some olive oil, parmesan cheese, and garlic powder to pot. Mix around until gnocchi is combined with everything. Set aside.
  3. Dice up your peppers, onion. Cut your cherry tomatoes in half and mince your garlic. Add all of your veggies to a large bowl to mix.
  4. Add olive oil, salt, oregano and basil to bowl with veggies. Mix around until everything is combined.
  5. Place a non stick liner on a large baking sheet. Add your veggies and gnocchi on sheet and mix everything around so its in an even layer.
  6. Bake in preheated oven for 40-45 minutes.
  7. Enjoy!!
