One of my all time favorite BBQ sides is hands down.
It’s hard to find that certain potato salad that you absolutely love. Don’t get me wrong, I’m not fussy when it comes to potato salad, but sometimes its either lacking something, or it has an ingredient that you aren’t a fan of.
For me, I’m not a huge fan of crunchy things in my potato salad. And when I say “things”, I mean onions or celery.
A lot of potato salads that I’ve had have either onions or celery, but not this one!
This recipe has the most simplest ingredients. Potatoes (obviously), hard boiled eggs, Italian dressing, and lots of mayonnaise. No one ever said this is a healthy potato salad…
Without that crunch of onions or celery, it has this amazing smooth and creamy texture. Hold the crunch please!
When you boil your potatoes, I like to leave the skin on. Ive tried both ways, peeling them before boiling, and leaving the skin on when boiling. I think the potatoes have a better consistency when you leave the skin on, and then peel it off after they are done cooking.
When they are cooked, and cooled off, the skin pretty much comes right off. As you can see in the photo, the skin is already peeling off by itself.
When chopping up your hard boiled eggs, you don’t want to chop them too small. You want to have some good size pieces throughout the salad.
When it comes time for mixing all of the ingredients together, make sure to use your biggest mixing bowl you have. A five pound bag of potatoes makes a lot!
Do yourself a favor…after you’ve mixed everything together, take a separate spoon and have a little taste. Even though this potato salad tastes better chilled, it also tastes amazing when its still a little warm.
