Fill a large pot with water. Add potatoes with skin in water. Bring to a boil, and boil until each potato is tender and cooked throughout. About 15-20 minutes. Each potato will take more or less time to cook, depending on size. I take tongs and a knife after 15 minutes and check the smaller ones first. If the knife slides through the middle easily, they are done.
In the meantime, peel and dice your hard boiled eggs. Make sure to chop them up well, but not too small. Set aside.
As your potatoes are done cooking, use tongs to move to a strainer to let them cool off.
Once they are cooled off enough to handle, peel skins off of each potato. The skin should come off fairly easy.
Cut your potatoes into medium size cubes and add to a large mixing bowl.
In the same bowl as potatoes, add your mayo, Italian dressing, chopped up eggs and salt.
Mix everything very well together.
Let chill before serving.
