Method
- Cut any fatty parts off of chicken breast, and add to crockpot.
- Add taco seasoning, salsa and lime juice on top of chicken in crockpot.
- Cover and cook on low for 6-8 hours, or high for 4 hours.
- When chicken is done, take out of crockpot and place in bowl to shred. Add about 1-1/12 cups of your sauce that the chicken cooked in to the shredded chicken. Let cool a bit.
- Add a scoop of the chicken in each lettuce wrap, and add your favorite toppings. I added some chopped up red onion and a sriracha aioli, which is just some mayo and sriracha mixed together! Garnished with some fresh parsley.
