Cut any fatty parts off of chicken breast, and add to crockpot.
Add taco seasoning, salsa and lime juice on top of chicken in crockpot.
Cover and cook on low for 6-8 hours, or high for 4 hours.
When chicken is done, take out of crockpot and place in bowl to shred. Add about 1-1/12 cups of your sauce that the chicken cooked in to the shredded chicken. Let cool a bit.
Add a scoop of the chicken in each lettuce wrap, and add your favorite toppings. I added some chopped up red onion and a sriracha aioli, which is just some mayo and sriracha mixed together! Garnished with some fresh parsley.
