I have been a huge fan of mashed potatoes for pretty much my whole life, as far back as I can remember! But…they are loaded with carbs, so, no thanks. From here on, when I want mashed potatoes, I am going to make this recipe for the best garlic mashed cauliflower!
I know, mashed cauliflower has been a fad for the past few years now…but I never found a recipe I actually liked and enjoyed eating, until now!!
The recipes I’ve made before were either too watery, or tasted too much like cauliflower, or weren’t creamy enough.
Winner winner, chicken dinner…I finally discovered a recipe that I will be sticking to!
By eating these verses mashed potatoes, you are saving so many carbs, calories and fat! Yes, there is butter in this recipe and parmesan cheese. But if you think about it, the amount of butter and heavy cream in traditional mashed potatoes is absurd. Why do you think they taste so good?!
But, lucky for me, and now you…we have this amazing recipe that is WAY better for you.
It was super easy too, and that’s always a good thing. “I love making hard recipes!” said no one ever…
As a matter of fact…this recipe was so easy and so stinking good…I’m willing to replace the mashed potatoes we usually have on Thanksgiving and make this!
