In a large pot bring salted water to a boil. Add cauliflower florets. Cook until very tender, about 12 minutes.
Drain cauliflower, and set aside.
In same large pot, over medium heat, add butter and let melt. Add garlic to melted butter and cook until garlic is fragrant, about 1 minute.
Take off heat. Set aside.
In a food processor or blender, add cauliflower and garlic/butter. Blend until everything is super smooth and no large chunks remain.
Pour blended cauliflower back in large pot. Add parmesan cheese, salt, pepper, and thyme. Stir around well until everything is mixed. Do a little taste test to make sure there is enough salt.
Garnish with some more thyme (optional).
