Method
- In a large pot bring salted water to a boil. Add cauliflower florets. Cook until very tender, about 12 minutes.
- Drain cauliflower, and set aside.
- In same large pot, over medium heat, add butter and let melt. Add garlic to melted butter and cook until garlic is fragrant, about 1 minute.
- Take off heat. Set aside.
- In a food processor or blender, add cauliflower and garlic/butter. Blend until everything is super smooth and no large chunks remain.
- Pour blended cauliflower back in large pot. Add parmesan cheese, salt, pepper, and thyme. Stir around well until everything is mixed. Do a little taste test to make sure there is enough salt.
- Garnish with some more thyme (optional).
- Enjoy!
