The Best Garlic Mashed Cauliflower

Servings 2 People

Ingredients
  

  • 2-3 Cloves of Garlic, minced
  • 1 Large Head of Cauliflower, cut in florets
  • 1/2 TSP Dried Thyme
  • 4 TBSP Butter
  • 1/4 Cup Grated Parmesan Cheese
  • Salt & Pepper, to taste

Instructions
 

  • In a large pot bring salted water to a boil. Add cauliflower florets. Cook until very tender, about 12 minutes.
  • Drain cauliflower, and set aside.
  • In same large pot, over medium heat, add butter and let melt. Add garlic to melted butter and cook until garlic is fragrant, about 1 minute.
  • Take off heat. Set aside.
  • In a food processor or blender, add cauliflower and garlic/butter. Blend until everything is super smooth and no large chunks remain.
  • Pour blended cauliflower back in large pot. Add parmesan cheese, salt, pepper, and thyme. Stir around well until everything is mixed. Do a little taste test to make sure there is enough salt.
  • Garnish with some more thyme (optional).
