Loaded Cauliflower And Chicken Casserole

This loaded cauliflower and chicken casserole is loaded with the same, delicious flavors as a loaded baked potato, but without the carbs!

If you like loaded baked potatoes, your gonna love this loaded cauliflower and chicken casserole! It is filled with roasted chicken, bacon bits, chives, and cheese! And the best part is…your missing out on all the carbs!

Cauliflower has been a replacement for carbs lately. Cauliflower pizza crust, mashed cauliflower. I think that if you really put your mind to it, you can find a cauliflower alternative to any carb loaded recipe!

I’m not sure what the best part about this dish was. It was a close call between the cheese and the bacon bits, although, the chicken was damn good!

This may be a shocker to you, and I am a little embarrassed to admit, me being a food blogger and all, but I just learnt what the difference between roasted and baked chicken. Roasting chicken is when you set the oven temperature high, which gives the chicken a nice browning on the outside, but doesn’t overcook the inside. Interesting!

The key to roasting chicken is to coat it well with olive oil, salt and pepper. That helps it create those delicious flavors and browning during the roasting.

To keep this recipe even healthier, I used low fat cheddar cheese, and didn’t use as much cheese as the original recipe called for, and it was still amazingly delicious!

I couldn’t get over how much this dish smelt like a loaded baked potato. When I took my first bite, I thought I was eating just that! The cauliflower had the perfect texture. It wasn’t too mushy, but wasn’t hard.

Oh, and I have to just make a statement about my garden fresh chives that I added in there. Every bite had a hint of oniony chive, and it was amazing!

Loaded Cauliflower And Chicken Casserole

Servings 4 People

Ingredients
  

  • 2 Heads Cauliflower, cut into florets
  • 2/4 Cups Bacon Pieces I used real bacon bits to save time
  • 2-3 Chicken Breasts, skinless and boneless
  • 1 tsp Garlic Powder
  • 6 Green Onions or Chives, cut up
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp olive oil
  • 2 Cups Low Fat or Fat Free Shredded Cheddar Cheese

Instructions
 

  • Preheat oven to 450º.
  • In a baking pan, add chicken breasts. Drizzle with olive oil and season with some salt and pepper. Roast in preheated oven for 45 minutes.
  • In the meantime, cut up cauliflower into florets. Add to large pot. Add water and salt. Bring to a boil and cook for 6 minutes. Drain and set aside.
  • When chicken is done, cut up into bite size pieces.
  • In a 9x13 casserole dish, add cauliflower, chicken, cheese, bacon pieces, chives, garlic powder, 1 tsp salt and 1/4 tsp pepper. Mix everything around.
  • Bring down oven temperature to 350º and bake casserole for 25-30 minutes.
