Loaded Cauliflower And Chicken Casserole

Servings: 4 People

Ingredients
  

  • 2 Heads Cauliflower, cut into florets
  • 2/4 Cups Bacon Pieces I used real bacon bits to save time
  • 2-3 Chicken Breasts, skinless and boneless
  • 1 tsp Garlic Powder
  • 6 Green Onions or Chives, cut up
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp olive oil
  • 2 Cups Low Fat or Fat Free Shredded Cheddar Cheese

Method
 

  1. Preheat oven to 450º.
  2. In a baking pan, add chicken breasts. Drizzle with olive oil and season with some salt and pepper. Roast in preheated oven for 45 minutes.
  3. In the meantime, cut up cauliflower into florets. Add to large pot. Add water and salt. Bring to a boil and cook for 6 minutes. Drain and set aside.
  4. When chicken is done, cut up into bite size pieces.
  5. In a 9x13 casserole dish, add cauliflower, chicken, cheese, bacon pieces, chives, garlic powder, 1 tsp salt and 1/4 tsp pepper. Mix everything around.
  6. Bring down oven temperature to 350º and bake casserole for 25-30 minutes.
  7. Enjoy!
