The Best Marinated Garden Tomatoes

This is the best marinated garden tomatoes recipe I have yet to come across. Simple ingredients, with superb flavor!

Do you have a crazy amount of tomatoes still growing in your garden? and don’t know what else to do with them other than making tomato sauce and salsa?…then look no further. This recipe for the best marinated garden tomatoes is the perfect way to use up your tomatoes!

Although, I must say. Making this recipe nearly put a dent into my amount of tomatoes that I have, but it helped!

And just to think back a couple months ago, when I was begging for my green tomatoes to ripen. Now I am overwhelmed and don’t know what to do with them!

Making homemade tomatoes sauce and jarring it up, or homemade salsa is a great way to use them up. And I do plan on doing with the rest. But this recipe is also great. It will last you a few days if you don’t happen to eat it all at once.

Its great for a healthy snack, or a side dish. Obviously, the longer you marinate something, the better it tastes. So, if these tomatoes sit in their marinade for a few days, they will taste even better!

Lets talk about that marinade, shall we?!

It’s a mixture of simple and very flavorful ingredients. Balsamic vinegars, garlic, basil, red onion, salt, pepper and some olive oil.

I also have a great amount of basil that I need to use up as well. So, its a win win for me!

Did I also mention how easy this recipe is?! Just chop up your tomatoes, place them in a large shallow dish (a casserole dish works just fine) and dump your mixture of marinade ingredients on top, let sit for a few hours, and your done!

No preheating your oven, or baking, or cooking. Its great!

The Best Marinated Garden Tomatoes

Ingredients
  

  • 3-4 Extra Large Tomatoes
  • 1/3 Cup olive oil
  • 1/4 Cup Red Wine Vinegar
  • 1/4 Cup Balsamic Vinegar
  • 2 tbsp Finely Chopped Red Onion
  • 1 Large Clove of Garlic, finely minced
  • 1 tbsp Fresh Basil, minced
  • 1 tsp Salt
  • Black Pepper, to taste

Instructions
 

  • Cut tomatoes into 1/2 inch thin slices and place in a large casserole dish, or a large shallow dish.
  • In a bowl, mix together olive oil, balsamic vinegar, red wine vinegar, garlic, basil, red onion, salt and pepper.
  • Pour marinade mixture all over tomatoes, cover tomatoes with plastic wrap and let marinate for 2-3 hours.
  • Enjoy!
