Chocolate Chip Banana Protein Muffins

These chocolate chip banana protein muffins are perfect for a quick and filling breakfast, or midday snack! Super moist, chunks of dark chocolate chips…oh, and guilt free!

Who doesn’t love a delicious muffin that’s filling and guilt free?! This recipe for chocolate chip banana protein muffins is just that! They are super tasty, moist from the bananas, and filling.

If you haven’t heard of the brand kodiak cakes, your welcome for mentioning them to you! A protein packed pancake and waffle mix is what gives these muffins their protein.

Even though kodiak cake mix is a pancake and waffle mix, you can use it for so many other recipes! Likes this muffin recipe.

This recipe is definitely kid friendly! I guarantee the whole family will approve! And you will approve too. Did I mention how easy they are to make?! Well…let me fill you in…

You want to start by mashing your bananas, and mixing them with all of the wet ingredients.

This mixture was not the best looking mixture…but that’s ok! Things slowly

It’s ok if your bananas aren’t completely mashed. If there are small chunks here and there, it makes for a great muffin consistency!

Next, you want to mix together your kodiak cake mix and cinnamon together in a separate bowl.

Add your wet ingredients mixture to the dry mixture and whisk together until everything is well combined.

Your batter will look alot like pancake batter!

Last, you want to add your chocolate chips. Now, I saved some (about 2-3 tablespoons) chocolate chips aside to sprinkle on top of my muffins before baking them. I think it gives them a cute look.

Then, bake them for the recommended amount of time. Mine took exactly 22 minutes to bake perfectly.

And voila! You have perfectly baked muffins that will fill you up, and satisfy those taste buds, or any sweet cravings you may have!

Chocolate Chip Banana Protein Muffins

Muffins that are packed with protein and good for you ingredients. They are super moist and super delish!

Ingredients
  

  • 2 Cups Kodiak Power Cakes Mix, buttermilk
  • 2 Ripe Bananas, mashed
  • 1 Cup Almond Milk, unsweetened
  • 1 Egg
  • ¼ Cup 100% Real Maple Syrup
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • ½ Cup Dark Chocolate Chips I set about 2 tablespoons of the chocolate chips aside to sprinkle on top of the muffins before baking to give them a cute look!

Instructions
 

  • Preheat oven to 350°. generously spray a 12 cup muffin pan with non stick spray or line with muffin cup liners. Set aside.
  • In medium bowl, mash bananas well. Add all wet ingredients to bowl with bananas. Whisk well until well combined.
  • In a separate bowl, add kodiak power cake mix and cinnamon. Mix until well combined.
  • Add dry ingredients to wet ingredients mixture.
  • Add chocolate chips and mix in batter.
  • Using a tablespoon size scoop, scoop batter into muffin cups, filling with equal and even amounts.
  • If you set aside some chocolate chips toad on top, do so.
  • Bake in preheated oven for 22 minutes. Test to make sure they are done by inserting toothpick in center. If it comes out clean they are done!
