Balsamic Caprese Pasta Salad

This balsamic caprese pasta salad is bursting with all of those favorite, summer time flavors! Refreshing, delicious and easy!

Who wants to eat a hot meal when its sweltering hot out? Not this girl! This balsamic caprese pasta salad is perfect for those hot nights. Nice and cold, bursting with the best flavors that summer has to offer!

Pasta salad season is here folks, and I’m here for it!

If you asked me what my favorite recipe was that reminded me of summer, it would be caprese. Caprese anything! The mixture of fresh basil and tomatoes screams summer!!

Minus the pasta, some salt and pepper, these are all of the ingredients you need for this recipe. Simple, right?!

They are literally summertime, staple ingredients. At least for me!

I always grow basil in my garden. That is an absolute must have for me!

I’m sure you’ve made a pasta salad recipe at least once in your lifetime, but maybe not. And thats fine! Obviously you want pasta salads to be cold and chilled. An easy way to speed up that process is by rinsing your cooked pasta with cold water after its done cooking!

Make sure to get as much water drained as you can. The last thing you want is soupy pasta salad. Gross.

The amounts of each ingredient are on point. every bite has a piece of everything. Enough ingredients to go round!

Like most pasta salads, this one tastes even better after it sits in the fridge for a while, and the flavors marinate. So any leftovers will be delicious!

Balsamic Caprese Pasta Salad

Balsamic Caprese Pasta Salad

This balsamic caprese pasta salad is bursting with all of those favorite, summer time flavors! Refreshing, delicious and easy!

Servings 6 people

Ingredients
  

  • 16 oz. box of rotini pasta
  • 8 oz. fresh mozzarella balls, cherry size, halved
  • 1/2 small red onion, diced
  • 1½ – 2 cups grape tomatoes, halved
  • 5 tbsps balsamic vinegar
  • 2 tbsps olive oil
  • handful of fresh basil, chopped
  • salt and pepper, to taste
  • parsley for garnish, optional

Instructions
 

  • Cook pasta according to package directions.
  • While pasta is cooking, get your ingredients ready.
  • When pasta is done, drain and rinse under cold water until pasta had cooled off. Make sure to drain as much water as you can.
  • Place pasta back into pan you cooked it in.
  • Add all of your ingredients to the pasta and mix until well combined.
  • Taste to see if it needs more salt, pepper or balsamic.
  • Serve chilled, enjoy!!
