Method
- Preheat oven to 425°.
- Line a large baking pan with foil. Spray with cooking spray and set aside.
- In a large bowl, mix together shredded chicken, cream cheese, sour cream, salsa, green onions, cumin, chili powder, shredded cheddar cheese, onion powder, salt and pepper.
- Scoop about 2-3 tablespoons of the chicken mixture onto each tortilla shell and spread mixture out so its an even layer on tortilla.
- Roll tortillas up. Place on baking sheet, seam side down.
- Spray tortillas with cooking spray.
- Bake in preheated oven for 15-20 minutes or until they start to brown and look nice and crispy.
- I made a dip with some salsa and sour cream (optional).
