This recipe for roasted tomato caprese grilled cheese isn’t your typical grilled cheese. It’s like a caprese salad in between two pieces of artisan bread! Drizzled with sweet balsamic glaze!

Roasted tomato caprese grilled cheese is a nice and easy gourmet grilled cheese recipe, if you will. It is loaded with fresh mozzarella, oven roasted tomatoes and fresh basil, then drizzled with sweet balsamic glaze.

This grilled cheese is by no means clean to eat. I mean, just look at it! Expect your hands to get a little messy. But thats ok! Totally worth it…

Roasted Tomato Caprese Grilled Cheese

This recipe for roasted tomato caprese grilled cheese isn't your typical grilled cheese. It's like a caprese salad in between two pieces of artisan bread! Drizzled with sweet balsamic glaze!

Servings 2 sandwiches

Ingredients
  

  • 3 large roma or plum tomatoes, sliced thin
  • 1-2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • balsamic glaze
  • fresh basil, chopped Use as much as you'd like. I didn't use measurements for this.
  • 4 slices of artisan bread of choice
  • 3-4 oz. fresh mozzarella cheese, sliced thin I used a fresh mozzarella cheese ball

Instructions
 

  • Preheat oven to 325°.
  • Place sliced tomatoes on a non stick baking tray. Drizzle with olive oil, salt and pepper. Bake in preheated oven for 45-50 min.
  • When tomatoes are done roasting, heat a skillet or saute pan over medium heat.
  • Brush outsides of each slice of bread with olive oil. Place a few slices of mozzarella on one slice of bread, followed by tomatoes, basil and more mozzarella and tomatoes.
  • Cook until cheese is melty and bread turns golden brown. About 5 minutes per side.
  • Drizzle with balsamic glaze. Serve immediately.
  • Enjoy!
