Roasted Tomato Caprese Grilled Cheese
This recipe for roasted tomato caprese grilled cheese isn't your typical grilled cheese. It's like a caprese salad in between two pieces of artisan bread! Drizzled with sweet balsamic glaze!

- 3 large roma or plum tomatoes, sliced thin
- 1-2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- balsamic glaze
- fresh basil, chopped Use as much as you'd like. I didn't use measurements for this.
- 4 slices of artisan bread of choice
- 3-4 oz. fresh mozzarella cheese, sliced thin I used a fresh mozzarella cheese ball
Preheat oven to 325°.
Place sliced tomatoes on a non stick baking tray. Drizzle with olive oil, salt and pepper. Bake in preheated oven for 45-50 min.
When tomatoes are done roasting, heat a skillet or saute pan over medium heat.
Brush outsides of each slice of bread with olive oil. Place a few slices of mozzarella on one slice of bread, followed by tomatoes, basil and more mozzarella and tomatoes.
Cook until cheese is melty and bread turns golden brown. About 5 minutes per side.
Drizzle with balsamic glaze. Serve immediately.
