Caramel Apple Blondies

These caramel apple blondies are simply delicious! Pieces of sweet and tart apples mixed into soft and chewy blondies, drizzled with caramel!

Caramel apple blondies. Think about that for a second. Blondies, with apple and caramel. Um, yes please!

To be completely honest with you, I’m not a huge fan of apple pie. I do like my apples though. And everyone seems to be making apple pies right now with the apples they’ve picked from orchards.

Mix things up!

Be daring. Be different. Try something new! Instead of your traditional apple pie ( I know, I know, we all love traditions) try making these guys. You won’t be sorry! OR, make both. Even better!

Now, like I said, I’m not a fan of apple pie, so therefore I’ve never made an apple pie before. Shocker, I know.

So I’m not sure how much work it is to make a good apple pie. But making these blondies was so easy.

You want to cook the apples down with some brown sugar, butter and cinnamon. Get them nice and soft, and create a sweet, almost caramel like sauce at the same time.

I must say, the blondie batter was pretty thick and a little hard to work with. But when I say hard, I mean totally worth it in the end!

I used a spatula to spread half of the batter out into a greased baking dish. Then spread the apples all over the batter.

Ok, two things…one, sorry for the awful lighting in this photo and two, notice how I sloppily spread the rest of the blondie batter out on top of the apples? That wasn’t my goal. My goal was to spread it out in a nice even layer with no apples showing.

The batter was so thick and difficult to work with that I just spread it out as much as I could. But it actually worked out great! Kinda like a cobbler!

I kinda like how you can see bits and pieces of the apples!

Caramel Apple Blondies

These caramel apple blondies are simply delicious! Pieces of sweet and tart apples mixed into soft and chewy blondies, drizzled with caramel!

Ingredients
  

For Blondies

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, soft
  • 1/4 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • tsp vanilla extract
  • 1/2 tsp cinnamon
  • caramel sauce to drizzle over blondies when baked

For Apple Filling

  • 2 large apples, chopped finely I used McIntosh
  • 2 tbsp dark brown sugar
  • 1 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat oven to 350°. Spray 11×7 baking pan with non stick spray. Set aside.

Make Apple Filling

  • In a medium saucepan over med-high heat, add diced apples, brown sugar, butter, vanilla and cinnamon. Cook mixture for about 7-10 minutes stirring frequently. Take off heat and set aside to cool.

Make Blondie Batter

  • In a bowl of stand mixer or handheld mixer, cream butter, granulated sugar and brown sugar until smooth and creamy.
  • Add in eggs one at a time. Beating well after each egg.
  • Add in salt and vanilla. Mix until well combined.
  • Add in flour, baking powder, and cinnamon. Mix until well combined and batter is smooth.
  • In bottom of baking dish, spread half of the blondie batter evenly. The batter is pretty thick, so i just used a spatula to spread it out. Make sure it's somewhat of an even layer.
  • Spread apple filling all over the batter evenly.
  • Add the rest of batter on top of the apples. This will be a little messy and hard to spread out into an even layer, just because the batter is so thick. Thats ok though! Spread it out as much as you can.
    Caramel Apple Blondies
  • Bake in preheated oven for 25-30 minutes.
  • Let cool almost completely and drizzle as much caramel sauce as you want on top!
  • Cut into squares and enjoy!
