Method
- Preheat oven to 350°. Spray 11×7 baking pan with non stick spray. Set aside.
- In a medium saucepan over med-high heat, add diced apples, brown sugar, butter, vanilla and cinnamon. Cook mixture for about 7-10 minutes stirring frequently. Take off heat and set aside to cool.
- In a bowl of stand mixer or handheld mixer, cream butter, granulated sugar and brown sugar until smooth and creamy.
- Add in eggs one at a time. Beating well after each egg.
- Add in salt and vanilla. Mix until well combined.
- Add in flour, baking powder, and cinnamon. Mix until well combined and batter is smooth.
- In bottom of baking dish, spread half of the blondie batter evenly. The batter is pretty thick, so i just used a spatula to spread it out. Make sure it's somewhat of an even layer.
- Spread apple filling all over the batter evenly.
- Add the rest of batter on top of the apples. This will be a little messy and hard to spread out into an even layer, just because the batter is so thick. Thats ok though! Spread it out as much as you can.

- Bake in preheated oven for 25-30 minutes.
- Let cool almost completely and drizzle as much caramel sauce as you want on top!
- Cut into squares and enjoy!
