Caramel Apple Blondies
These caramel apple blondies are simply delicious! Pieces of sweet and tart apples mixed into soft and chewy blondies, drizzled with caramel!

For Blondies
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, soft
- 1/4 cup granulated sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1½ tsp vanilla extract
- 1/2 tsp cinnamon
- caramel sauce to drizzle over blondies when baked
For Apple Filling
- 2 large apples, chopped finely I used McIntosh
- 2 tbsp dark brown sugar
- 1 tbsp unsalted butter
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Make Apple Filling
In a medium saucepan over med-high heat, add diced apples, brown sugar, butter, vanilla and cinnamon. Cook mixture for about 7-10 minutes stirring frequently. Take off heat and set aside to cool.
Make Blondie Batter
In a bowl of stand mixer or handheld mixer, cream butter, granulated sugar and brown sugar until smooth and creamy.
Add in eggs one at a time. Beating well after each egg.
Add in salt and vanilla. Mix until well combined.
Add in flour, baking powder, and cinnamon. Mix until well combined and batter is smooth.
In bottom of baking dish, spread half of the blondie batter evenly. The batter is pretty thick, so i just used a spatula to spread it out. Make sure it's somewhat of an even layer.
Spread apple filling all over the batter evenly.
Add the rest of batter on top of the apples. This will be a little messy and hard to spread out into an even layer, just because the batter is so thick. Thats ok though! Spread it out as much as you can.
Bake in preheated oven for 25-30 minutes.
Let cool almost completely and drizzle as much caramel sauce as you want on top!
Cut into squares and enjoy!
