Method
- Preheat oven to 350°. Oil a baking dish and set side.
- In a large sauté pan, brown beef and cook until done. Add spices, water, sour cream and salsa. Mix around and let simmer for a few minutes. Take off heat and set aside.
- Wash peppers. Cut in half the long way. Take out seeds and insides carefully without breaking the peppers.
- Place cut peppers, cut side up in oiled baking dish and bake for 5 minutes.
- Take peppers out of oven. Stuff each pepper with beef. Make sure to stuff them generously until the beef is all used up.
- Sprinkle each top with cheddar cheese.
- Cover with foil and bake in oven for 10 minutes.
- Take foil off and bake for an additional 15 minutes.
- Garnish with some parsley or cilantro.
