Taco Stuffed Peppers
These taco stuffed peppers are packed with flavor and easy to make! Tastes just like a taco, without the carbs!

- 3 large bell peppers (any color)
- 1.5 lbs. ground beef
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- pinch of cayenne pepper
- 1/4 tsp salt
- 1/4 cup water
- 1 cup sour cream, lite
- 1/2 cup salsa
- 1 cup cheddar cheese, shredded
- fresh cilantro or parsley, chopped
Preheat oven to 350°. Oil a baking dish and set side.
In a large sauté pan, brown beef and cook until done. Add spices, water, sour cream and salsa. Mix around and let simmer for a few minutes. Take off heat and set aside.
Wash peppers. Cut in half the long way. Take out seeds and insides carefully without breaking the peppers.
Place cut peppers, cut side up in oiled baking dish and bake for 5 minutes.
Take peppers out of oven. Stuff each pepper with beef. Make sure to stuff them generously until the beef is all used up.
Sprinkle each top with cheddar cheese.
Cover with foil and bake in oven for 10 minutes.
Take foil off and bake for an additional 15 minutes.
Garnish with some parsley or cilantro.
