Mexican Street Corn Chicken

This Mexican street corn chicken recipe is nothing but flavorful! Chicken breast is topped with a mixture of sweet corn, mayonnaise, sour cream and lime juice!

Mexican Street Corn chicken is the perfect weeknight meal. Its tasty, easy and takes only a few ingredients!

Ive never tried authentic Mexican street corn, but I really want to! Ive been seeing all of these recipes for it. And different ways to include it in recipes, like this one!

I can only imagine how flavorful and tasty the real stuff is, because this recipe was super tasty!

From what I understand, Mexican Street Corn is a blend of mayonnaise, sour cream, lime juice, some spices and cotija cheese. Which is topped and smeared all over an ear of cooked corn. Sounds delicious!

This is one of those recipes where you will end up making again and again, and again, because its THAT good! It will quickly become a new family favorite.

The best part of this recipe is the corn mixture! Im sure you’ve noticed from the photos that it looks like a pile of corn. Wheres the chicken?! Well, its in there. Its underneath all of the good stuff!

Mexican Street Corn Chicken

This Mexican street corn chicken recipe is nothing but flavorful! Chicken breast is topped with a mixture of sweet corn, mayonnaise, sour cream and lime juice!

Ingredients
  

  • 2 lbs. chicken breast, boneless + skinless (4-6 thin chicken breasts)
  • 2 15 oz. cans of sweet corn, drained
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tbsp lime juice
  • tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper, optional
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup cilantro or parsley, chopped

Instructions
 

  • Preheat oven to 350°.
  • Place chicken breasts in a casserole dish. Season with salt and pepper.
  • In a bowl mix together corn, mayonnaise, sour cream, lime juice, chili powder, salt and garlic powder.
  • Top chicken with corn mixture.
  • Bake in preheated oven for 30-40 minutes. Or until chicken reaches an internal temperature of 165°.
  • When chicken is done, sprinkle cotija cheese crumbles on top, followed by cayenne pepper and parsley or cilantro.
  • Enjoy!
