Mexican Street Corn Chicken
This Mexican street corn chicken recipe is nothing but flavorful! Chicken breast is topped with a mixture of sweet corn, mayonnaise, sour cream and lime juice!

- 2 lbs. chicken breast, boneless + skinless (4-6 thin chicken breasts)
- 2 15 oz. cans of sweet corn, drained
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tbsp lime juice
- 1½ tsp chili powder
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper, optional
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro or parsley, chopped
Preheat oven to 350°.
Place chicken breasts in a casserole dish. Season with salt and pepper.
In a bowl mix together corn, mayonnaise, sour cream, lime juice, chili powder, salt and garlic powder.
Top chicken with corn mixture.
Bake in preheated oven for 30-40 minutes. Or until chicken reaches an internal temperature of 165°.
When chicken is done, sprinkle cotija cheese crumbles on top, followed by cayenne pepper and parsley or cilantro.
