Homemade Cosmic Brownies

I will forever have a soft spot for Little Debbie cosmic brownies. And with this recipe for homemade cosmic brownies, I can now make my own!

These brownies are the best! Both homemade version, and original!

Every year, when my family would go on summer vacation, me and my sister got to pick a few snacks each. One of my snacks would ALWAYS be little Debbie cosmic brownies. And if I remember correctly, they did not last very long.

I have the biggest sweet tooth when it comes to cosmic brownies. I could easily crush an entire box in one day. But I don’t…

We all love to indulge in a sweet treat, or a comfort food. But most of them are store bought (in my case) and are filled with preservatives and artificial flavoring/coloring.

As much as I love my little Debbie brownies, I don’t love the artificial chemicals I’m putting in my body.

This recipe is all natural! No artificial anything, minus the sprinkles.

Now, let’s be real. Obviously any copycat recipe will never taste exactly like the original recipe. These cosmic brownies don’t taste JUST like the original cosmic brownies.

They have that delicious homemade, and real flavor!

The ganache topping is so rich and fudgy! The brownie consistency is the exact consistency of an original cosmic brownie! Soft, dense and delish!

If you’re a true cosmic brownie fan, you may have noticed that these brownies don’t have the original rainbow candy chips. Instead, I was forced to use regular rainbow sprinkles. Unfortunately, I couldn’t find rainbow candy chips anywhere, to save my life!

Homemade Cosmic Brownies

These homemade cosmic brownies are fudgy and chewy, with a rich chocolate ganache topping. Topped with rainbow sprinkles! A great copycat recipe for Little Debbie Brownies!

Ingredients
  

For Brownies

  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1/2 cup cocoa powder, unsweetened
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For Chocolate Ganache

  • 2 tbsps butter, melted
  • 3 tbsps cocoa powder
  • 1 tbsp honey
  • 1 tsp pure vanilla extract
  • 1 cup confectioners powdered sugar
  • 1 tbsp half and half or milk
  • rainbow sprinkles or chips

Instructions
 

  • Preheat oven to 350°. Spray an 8×8 baking pan with non stick spray and set aside.
  • In a large bowl, add butter, granulated sugar, brown sugar, eggs and vanilla. Mix until sugar is dissolved and mixture is smooth. Add cocoa powder, flour, salt and baking powder. Mix until well combined. Brownie batter will be thick.
  • Transfer batter into baking pan, and spread around until nice and even. Cook in preheated oven for 28-30 minutes.
  • While brownies are baking, make ganache topping.
  • In a bowl, mix together butter, cocoa powder, honey, and vanilla.
  • Add powdered sugar and half and half. Mix until ganache is smooth and creamy. If mixture is dry, add a splash more of half and half.
  • As soon as brownies are done and out of the oven, place ganache on top of hot brownies so the ganache is easier to spread around.
  • Spread ganache on top of brownies in an even layer.
  • Sprinkle sprinkles on top.
  • Let brownies cool completely before cutting into squares.
  • Store brownies in container in fridge.
  • Enjoy!
