Preheat oven to 350°. Spray an 8x8 baking pan with non stick spray and set aside.
In a large bowl, add butter, granulated sugar, brown sugar, eggs and vanilla. Mix until sugar is dissolved and mixture is smooth. Add cocoa powder, flour, salt and baking powder. Mix until well combined. Brownie batter will be thick.
Transfer batter into baking pan, and spread around until nice and even. Cook in preheated oven for 28-30 minutes.
While brownies are baking, make ganache topping.
In a bowl, mix together butter, cocoa powder, honey, and vanilla.
Add powdered sugar and half and half. Mix until ganache is smooth and creamy. If mixture is dry, add a splash more of half and half.
As soon as brownies are done and out of the oven, place ganache on top of hot brownies so the ganache is easier to spread around.
Spread ganache on top of brownies in an even layer.
Sprinkle sprinkles on top.
Let brownies cool completely before cutting into squares.
Store brownies in container in fridge.
