Method
- In a small bowl mix together brown sugar, soy sauce, red onion, ground ginger, rice vinegar and sesame seeds.
- Place pork roast in slow cooker. Pour the soy sauce mixture over pork.
- Place the garlic cloves on top.
- Cover and cook on low for 7 hours, or high for 4 hours.
- When done, shred pork with a fork until its nice and shredded. Mix around in liquid and let sit on warm for a few minutes.
- In meantime, make sour cream mixture. Mix together sour cream, lime juice, onion powder, chili powder, and ground ginger. Place in a small ziplock bag and cut tip of corner off.
- Warm up corn tortillas in microwave or in a sauté pan.
- Put together tacos by placing some pulled pork in tortilla, followed by shredded red cabbage, green onions and zesty sour cream.
- Enjoy!
